يستكشِف الكتاب الأهمية الثقافيّة والاقتصاديّة والاجتماعيّة للكركند على مَرّ التاريخ. ويوضح المراحل الزمنيّة لتطوّر هذه المأكولات البحريّة من قشريّات كانت طعاماً للفقراء في عصورٍ سحيقة، إلى طعام شهِيّ فاخر يتناوله الأغنياء في شتّى أنحاء العالم.

تأخذ تاونزند القرّاء في رحلةٍ حافلةٍ بفنون الطّهو، وتُلقي نظرة ثاقبة على الوصفات العديدة لطهْو الكركند طَوال حِقبٍ مختلفة. ويتناول الكتاب موضوعاتٍ متنوعة، منها تأثير صيد الكركند في المجتمعات الساحليّة، وتطوّر طرائق طبْخ الكركند، والتّحديات التي يفرضها صيد الكركند على بقاء هذه القشريّات.

كما يستعرض الكتاب القضايا المعاصرة المتعلقة بالكركند؛ فيناقش التّحديات المتعلّقة بحفظهِ وتخزينهِ، والخلافات على تصنيفهِ، والنّزاعات على مناطق صيدِه، والاختلافات بشأن أساليب قتله.

I’m thrilled to announce the publication of my Arabic translation of “Lobster: A Global History” by Elisabeth Townsend. The book, now available through the Abu Dhabi Arabic Language Centre’s Kalima Project, part of the Department of Culture and Tourism – Abu Dhabi, dives into the rich cultural, economic, and social significance of lobsters throughout the ages.

Townsend takes us on a fascinating culinary journey, tracing the evolution of this prized crustacean from being a staple for the poor in ancient times to becoming a luxurious delicacy synonymous with affluence. She explores the many ways lobsters have been prepared and enjoyed throughout history, as well as their impact on coastal communities, the evolution of lobster fishing practices, and the ongoing challenges to their sustainability.

The book also addresses contemporary issues surrounding lobsters, discussing the challenges of their conservation and storage, the debates over their classification, territorial disputes concerning their fishing areas, and ethical concerns about their harvesting.
